The person assigned to receive the food, beverage, and nonfood products that have been ordered should be both knowledgeable and experienced. Receiving skill is acquired through training and experience, particularly with meat, poultry, and seafood items. The receiver also needs knowledge of proper handling and storage of food items.

Employees who have been properly trained and have the right tools can do this job. A receiver manages paperwork, recognizes acceptable quality in all products ordered, and manages the deliveries and drivers. He or she adheres to food safety protocols, solves problems, and communicates errors, problems and other issues to management. Being able to recognize that the quality of the goods delivered is consistent with what was ordered is essential. Proper training is a must in order to avoid errors, mistakes, and confusion, all of which costs the operation money.
