Chapter 6, Problem Discussion_Questions 1 : 2. Chef Raoul, Larry the line cook, and...

2. Chef Raoul, Larry the line cook, and a few other members of the cooking team have just returned from the National Restaurant Association‘s Hotel and Restaurant Trade Show in Chicago. They have collected information about products, equipment, and so on. Larry spent a lot of time chatting it up with the sales reps from the processor that makes the fresh mozzarella used in the restaurant. It is currently ordered through a local supplier. Larry has the sales brochures and price quotes. He‘s quite excited to see the quantity discounts available—especially for a tractor-trailer load. Explain to Larry why this won‘t work for Farfalle Arrabbiata.

Step-By-Step Solution

2. A quantity discount is a discount given when a certain quantity of the same product is ordered. For example, a supplier may have a discount program for ordering 10 cases or more of a specific product. Ordering full pallets of one product is another example of qualifying for a quantity discount. Quantity discounts have to be evaluated for actual savings. Depending on the amount needed to be purchased to secure the discount, it may not really be cost effective. Storage costs and space need to be evaluated. In this case – the mozzarella – also has a shelf life to consider.
